Well, there are Tom Riddle and young Severus in the flashbacks (the worst memory one starts with Snape knowing all the answers to his OWLs, and of course his Advanced Potion book qualifies him as a teen potion genius), but you're right, I don't recall any Slytherins in the present day being academically strong in anyone's class, not just McGonnegall's.
