I can't remember what exactly comes up during Ahsoka's trial, but I imagine the discussion of who she reported to and from there, the lineage of her master etc. came up while Tarkin was prepping his case. *hands* As you say, he'd have had files on them, especially since he worked with a Jedi himself on the mission that landed him in the Citadel in the first place.
